No-Bake Peanut Butter Chocolate Energy Bites

  • Author: Emma
  • Total Time: 20 minutes
  • Yield: 20-25 servings 1x

Description

These no-bake peanut butter chocolate energy bites are a quick, healthy, and satisfying snack made with pantry staples. They are chewy, sweet, and salty, requiring no baking and just 10 minutes of active prep time.

Ingredients

Scale
  • 2 cups old-fashioned rolled oats
  • 1 cup crunchy peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. In a large mixing bowl, combine the crunchy peanut butter and honey. If the peanut butter is stiff, microwave it for 15-20 seconds to soften. Stir until smooth.
  2. Add the vanilla extract and salt to the peanut butter mixture and mix until uniform.
  3. Pour in the rolled oats and stir until fully incorporated and the mixture resembles a thick, sticky dough with no dry patches.
  4. Fold in the chocolate chips (and any optional add-ins like chopped peanuts or flaxseed) until evenly distributed.
  5. Cover the bowl and chill the mixture in the freezer for 15-20 minutes or in the refrigerator for 30-45 minutes to firm up.
  6. Scoop out about a tablespoon of the mixture at a time and roll between your palms to form 1-inch balls. If the mixture is sticky, wet your hands slightly with water.
  7. Place the rolled bites on a parchment-lined baking sheet.
  8. Return the baking sheet to the freezer for 10 minutes to set completely before serving or storing.

Notes

Use old-fashioned rolled oats, not instant or steel-cut. Crunchy peanut butter is recommended for texture. If the mixture is too dry, add more honey; if too wet, add more oats. Wet hands with water if the mixture sticks while rolling. Store in an airtight container in the fridge for up to two weeks or in the freezer for up to three months.
