Crunchy Pumpkin Granola: Easy 5-Ingredient Maple Recipe

  • Author: Emma
  • Total Time: 45 minutes
  • Yield: 8 servings 1x

Description

A simple, crunchy homemade pumpkin granola made with just five core ingredients. This budget-friendly, make-ahead breakfast is perfect for busy mornings and tastes like fall in every bite.

Ingredients

Scale
  • 6 cups old-fashioned rolled oats
  • 1 cup pumpkin puree (100% pure, not pie filling)
  • ½ cup real maple syrup (Grade A or B)
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons pumpkin pie spice
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract (optional)
  • 1 cup chopped pecans or walnuts (optional)
  • ½ cup dried cranberries or raisins (optional)
  • ½ cup dark chocolate chips (optional)

Instructions

  1. Preheat oven to 300°F (150°C). Line two half-sheet baking pans with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, pumpkin pie spice, and salt. Toss to distribute spices evenly.
  3. In a separate small bowl or measuring cup, whisk together the maple syrup, melted coconut oil, and vanilla extract until smooth.
  4. Pour the wet mixture over the dry oats. Use a spatula or hands to fold everything together, ensuring every oat is coated.
  5. Spread the mixture evenly onto the prepared baking sheets in a thin layer. Divide between two pans if necessary.
  6. Bake for 30-35 minutes, stirring the granola every 10 minutes to ensure even browning.
  7. Remove from oven. The granola will feel soft but will crisp up as it cools. Let it cool completely on the pans (about 30 minutes).
  8. Once completely cool, stir in any optional add-ins like dried fruit, nuts, or chocolate chips.
  9. Transfer to an airtight container and store at room temperature for up to two weeks.

Notes

Do not use instant or steel-cut oats; they will not get crunchy. Ensure pumpkin puree is drained well if homemade to avoid soggy granola. Stirring every 10 minutes is crucial for even browning. The granola must cool completely to achieve the desired crunch. If your kitchen is humid, store in the fridge.
