Ingredients
- 8 oz (225g) full-fat block cream cheese, softened
- 2 tablespoons unsalted butter
- 1 teaspoon garlic powder
- ½ cup (120ml) hot sauce (e.g., Frank’s RedHot)
- 2 cups (300g) cooked chicken, shredded or chopped
- 1 cup (100g) shredded low-moisture mozzarella cheese
- ½ cup (50g) shredded sharp cheddar cheese
- 1 large bag thick tortilla chips for serving
- Optional: Chopped green onions for garnish
- Optional: Sour cream or blue cheese dressing for serving
Instructions
- Prep the chicken by removing skin and bones from rotisserie chicken, then shred or chop into bite-sized pieces. Set aside.
- Heat butter in a large skillet over medium heat. Add cubed cream cheese and stir constantly for 2-3 minutes until melted and smooth.
- Stir in hot sauce and garlic powder until fully incorporated and the mixture is vibrant orange-red.
- Add the chopped chicken to the skillet and stir gently to coat. Heat through for 1-2 minutes.
- Remove the skillet from heat. Sprinkle mozzarella and cheddar cheese over the top. Cover with a lid for 1-2 minutes to melt the cheese via steam.
- Stir gently until the cheese is melted and the dip is creamy and cohesive.
- Transfer to a serving bowl, garnish with green onions if desired, and serve immediately with tortilla chips.
Notes
Do not use spreadable cream cheese in a tub as it has too much moisture. Let block cream cheese sit out for 15 minutes before starting. If the dip thickens while sitting, add a splash of milk or chicken broth to loosen. This dip does not freeze well due to dairy separation. For a lighter version, use light cream cheese and low-fat mozzarella. For a vegetarian option, substitute chicken with diced mushrooms or cauliflower.
