  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together on medium speed for 2-3 minutes until light and fluffy.
  3. Add the egg, pumpkin puree, and vanilla extract to the butter mixture. Beat on low speed until just combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
  5. Pour the dry ingredients into the wet ingredients and mix on low speed until just combined, being careful not to overmix.
  6. Use a spatula to gently fold in the chocolate chips.
