Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan and line with parchment paper.
- In a small bowl, combine ½ cup flour, ½ cup brown sugar, 1 teaspoon cinnamon, and cold cubed butter. Mix with a fork until coarse crumbs form. Set aside.
- Peel and dice apples into ½-inch cubes. Toss with lemon juice to prevent browning.
- In a medium bowl, whisk together 2 cups flour, baking powder, baking soda, salt, and remaining cinnamon.
- In a large bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in milk and vanilla.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in the diced apples.
- Pour batter into prepared pan and spread evenly. Sprinkle streusel topping over the top.
- Bake for 45-50 minutes until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Ensure butter and eggs are at room temperature for best texture. Do not overmix the batter to avoid a dense cake. For the streusel, keep butter cold to maintain crumbly texture. Apples can be peeled or left on based on preference, but firm varieties like Granny Smith are recommended.
