Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan and line with parchment paper.
  2. In a small bowl, combine ½ cup flour, ½ cup brown sugar, 1 teaspoon cinnamon, and cold cubed butter. Mix with a fork until coarse crumbs form. Set aside.
  3. Peel and dice apples into ½-inch cubes. Toss with lemon juice to prevent browning.
  4. In a medium bowl, whisk together 2 cups flour, baking powder, baking soda, salt, and remaining cinnamon.
  5. In a large bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in milk and vanilla.
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  7. Gently fold in the diced apples.
