Description
A rustic, smoky outdoor meal featuring fresh bratwursts smoked on a grill and served with sweet, jammy caramelized onions cooked in beer and butter.

- 1.5 lbs fresh bratwurst (pork or pork-beef blend)
- 3 large yellow onions, sliced into 1/4-inch rings
- 4 tbsp unsalted butter
- 1 cup German-style lager or pilsner
- 1 tsp caraway seeds
- 2 tbsp Dijon mustard
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and black pepper to taste
Instructions
- Set up your grill for indirect heat with two zones: a hot zone (400°F/200°C) and a cool zone (300°F/150°C). If using charcoal, add wood chips (hickory or applewood) to the coals.
- In a small bowl, mix Dijon mustard, paprika, garlic powder, onion powder, salt, and pepper. Brush this mixture all over the bratwursts.
- Place the brats on the cool side of the grill (indirect heat). Close the lid and smoke for 20-25 minutes, flipping halfway through, until internal temperature reaches 160°F (71°C).
- While brats are smoking, place a cast-iron skillet on a side burner or cooler part of the grill. Melt butter over medium heat.
- Add sliced onions to the skillet. Cook for 10 minutes, stirring occasionally, until translucent and soft.
- Reduce heat to medium-low. Continue cooking onions for another 15-20 minutes until deep golden brown and caramelized.
- Sprinkle caraway seeds over onions. Pour in beer, scraping the bottom of the pan to release browned bits. Let beer reduce by half (about 5 minutes) until mixture is thick and jammy.
- Move smoked brats to the direct heat zone of the grill. Sear for 1-2 minutes per side until casing is crispy and charred.
- Remove brats from grill and let rest for 2 minutes. Slice in half lengthwise or into thick rounds.
- Serve brats piled over the caramelized onions. Pair with crusty bread or pretzel rolls.
Notes
Do not pierce the brats with a fork as this releases juices and dries them out. Use low heat for onions to prevent burning and ensure proper caramelization. Rest brats for 2 minutes after searing to retain moisture. Leftovers can be stored in the fridge for up to 3 days but do not freeze well.
