- 2 lbs Yukon Gold potatoes, cut into 1-inch cubes
- 8 oz thick-cut bacon
- 1 medium yellow onion, finely diced

- Kosher salt and freshly cracked black pepper, to taste
- 2 tbsp fresh chives, chopped (for garnish)
Instructions
- Wash potatoes and cut into 1-inch cubes. Place in a large pot, cover with cold water by an inch, and add a generous pinch of salt.
- Bring to a boil, then reduce to a simmer. Cook for 15-20 minutes until fork-tender but firm. Drain immediately and spread on a baking sheet to cool slightly.
- While potatoes boil, cook bacon in a cast-iron skillet over medium heat until crispy. Remove bacon with a slotted spoon and crumble into chunks. Leave 2-3 tablespoons of bacon fat in the skillet.
- Reduce heat to medium-low. Add diced onion to the skillet with the bacon fat and sauté for 3-4 minutes until soft.
- Add apple cider vinegar, brown sugar, Dijon mustard, salt, and pepper to the skillet. Whisk constantly until sugar dissolves and mixture simmers gently for about 2 minutes.
- Place warm potatoes in a large mixing bowl. Pour the hot vinaigrette over the potatoes while they are still warm.
- Gently fold potatoes to coat evenly, then crumble crispy bacon over the top. Toss gently again.
- Let the salad rest for at least 10 minutes before serving to allow flavors to meld.
