- 1 cup smooth peanut butter
- 2 cups heavy whipping cream
- 1 cup semi-sweet chocolate chips
Instructions
- Place chocolate sandwich cookies in a food processor and pulse until fine, sandy crumbs form. Pour into a medium bowl.
- Add peanut butter to the cookie crumbs and mix until the mixture resembles dark, damp sand and holds together when squeezed.
- Press the crust mixture firmly and evenly into the bottom of a 10-inch springform pan.
- In a large, cold bowl, whip heavy cream with an electric mixer on medium-high speed until stiff peaks form (about 2-4 minutes).
- Melt semi-sweet chocolate chips in the microwave or double boiler until smooth. Let cool for 5 minutes until warm but not hot.
- Pour cooled chocolate into the whipped cream and gently fold together with a rubber spatula until streaks remain.
- Spread the chocolate cream filling evenly over the crust.
- Cover with plastic wrap or foil and refrigerate for at least 4 hours, or overnight, until set.
Notes
Use smooth commercial peanut butter for best setting results. Ensure heavy cream is very cold for proper whipping. Melted chocolate must be cooled before folding into cream to prevent deflation. For clean slices, run a knife under hot water and dry before cutting. Can be stored in the fridge for up to 5 days or frozen for up to 2 months.
