Description
These easy, no-bake chocolate chip granola bars are the perfect solution for busy school mornings. With a perfect snap and chewy texture, they are customizable, lunchbox-friendly, and ready in under 20 minutes of active time.

- 6 cups old-fashioned rolled oats
- 1 cup natural creamy peanut butter
- 1/2 cup smooth honey
- 1/2 cup unsalted butter
- 1 cup dark chocolate chips
- 1 tsp vanilla extract
- 1/2 tsp sea salt flakes
Instructions
- Line a 9×9 inch baking pan with parchment paper, creating handles on opposite sides.
- In a large saucepan over medium-low heat, combine butter, peanut butter, and honey. Stir constantly until melted and smooth (3-5 minutes). Do not let it boil.
- Remove from heat and stir in vanilla extract and salt.
- Add rolled oats and fold until every oat is coated. Add any additional mix-ins now.
- Transfer mixture to the prepared pan and press down firmly and evenly to remove air pockets.
- Sprinkle chocolate chips on top and gently press them in.
- Refrigerate for at least 30 minutes until firm.
- Lift the block out of the pan using parchment handles and cut into 12-16 bars.
Notes
Do not use instant or steel-cut oats. Press the mixture firmly to ensure bars hold together. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months. For nut-free versions, substitute peanut butter with sunflower seed butter.
