Instructions

  1. Grease a 9×13 inch baking dish with 2 tablespoons of softened butter.
  2. Tear or cut day-old bread into 1-inch cubes and arrange them in a single layer in the prepared baking dish.
  3. In a large mixing bowl, whisk eggs vigorously until no whites remain.
  4. Add heavy cream, whole milk, granulated sugar, vanilla extract, 1 teaspoon cinnamon, and salt to the eggs. Whisk until smooth and sugar is dissolved.
  5. Pour the custard evenly over the bread cubes. Gently press down on the bread to ensure every piece is coated and soaked.
  6. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or ideally overnight.
  7. While the casserole soaks, make the streusel: In a small bowl, combine flour, brown sugar, and 1/2 teaspoon cinnamon. Add cold cubed butter and rub it in with fingers or two forks until the mixture resembles coarse crumbs.
  8. Preheat oven to 350°F (175°C).
  9. Remove the casserole from the fridge and uncover. Sprinkle the streusel topping evenly over the surface.
  10. Bake for 45-50 minutes, or until the top is golden brown and crispy, and the center is set (not jiggly). Tent with foil if browning too quickly.
