Description

Small-batch breakfast burritos designed for single servings to prevent food waste. These bite-sized burritos are freezer-friendly, reheat quickly, and are perfect for meal prep.


Ingredients

  • 6 large eggs
  • Splash of milk or cream (optional, for fluffiness)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup Monterey Jack cheese, shredded
  • 1 cup cooked bacon or sausage, crumbled and drained
  • 1/2 cup diced bell peppers and onions
  • 1 teaspoon butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 small-flour tortillas (6-inch / 15 cm)
  • Non-stick cooking spray

Instructions

  1. Cook bacon or sausage until crispy/browned, then chop into small pieces. Drain thoroughly on paper towels to remove grease.
  2. In the same pan, melt butter and sauté diced bell peppers and onions over medium heat for 3-4 minutes until soft. Season with a pinch of salt. Remove and set aside with the meat.
  3. Whisk eggs with milk (if using), salt, and pepper. Pour into the warm pan and cook gently, pushing edges to center, until just starting to set but still wet. Remove from heat immediately.
  4. Heat a clean, dry skillet over medium-low heat. Warm each tortilla for 20-30 seconds per side to make it pliable.
  5. Place a warm tortilla on a plate. Add a spoonful of egg mixture (approx. 2 tablespoons), a sprinkle of cheese, and some meat/veggie filling.
  6. Fold the bottom of the tortilla up, fold in the sides, and roll tightly into a small cigar shape. Place seam-side down.
  7. Repeat with remaining tortillas.
  8. Let burritos cool completely to room temperature to prevent condensation.
  9. Place burritos in a single layer on a baking sheet and freeze for 30 minutes (flash freeze).
  10. Transfer to freezer-safe bags or containers. Store in freezer for up to 3 months or refrigerator for up to 4 days.

Notes

Do not overfill the burritos to prevent leaking. Ensure meat and veggies are drained well to avoid soggy tortillas. Warm tortillas before rolling to prevent cracking. Reheat at 50% power in microwave to maintain texture. Do not freeze with salsa or avocado inside.
