- 1.5 lbs boneless, skinless chicken breasts
- 1/2 cup oil-packed sun-dried tomatoes, drained and chopped
- 1 cup heavy cream
- 4–5 cloves garlic, minced
- 1/2 cup low-sodium chicken broth
- 1/2 cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- Pat chicken breasts dry and pound to an even 1/2-inch thickness. Season generously with salt and pepper.
- Heat butter and olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through (165°F). Remove chicken and set aside.
- Reduce heat to medium. Add minced garlic and red pepper flakes to the pan, sautéing for 30-60 seconds until fragrant.
- Add sun-dried tomatoes and chicken broth, scraping up brown bits from the bottom of the pan. Simmer for 1 minute.
- Pour in heavy cream and Italian seasoning. Simmer gently for 2-3 minutes until the sauce thickens slightly.
- Remove skillet from heat. Stir in grated parmesan cheese until melted and smooth. Taste and adjust seasoning.
- Return chicken to the pan, spooning sauce over the top. Let sit for 1 minute to reheat gently before serving.
Notes
Pound chicken evenly for consistent cooking. Save the oil from the sun-dried tomatoes to add flavor to the sauce. Do not add cheese while the pan is on high heat to prevent clumping. This recipe can be made vegetarian by substituting chicken with chickpeas or extra vegetables.
