Description
Stress-free, make-ahead breakfast sliders featuring fluffy buttermilk biscuits, scrambled eggs, crispy bacon, and sharp cheddar cheese. Perfect for game day tailgating or brunch as they hold together well and taste great cold or room temperature.
Ingredients
- 1 large can (12 count) large buttermilk biscuits
- 6 large eggs
- 8 slices thick-cut bacon
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons unsalted butter, melted
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Open the can of biscuits and separate them. Gently press each biscuit down slightly to flatten.
- Arrange all 12 biscuits snugly in a 9×13 inch baking dish, ensuring they are touching.
- Cook bacon in a large skillet over medium heat until crispy but not burnt. Transfer to a paper towel-lined plate to cool, then chop into small bite-sized pieces.
- In the same skillet, whisk eggs with a pinch of salt and pepper. Pour into the pan over medium-low heat and stir gently until slightly wet but set. Remove from heat and mix in half of the shredded cheddar cheese.
- Split each biscuit horizontally. Place a generous spoonful of the cheesy egg mixture onto the bottom half of each biscuit.
- Sprinkle chopped bacon on top of the eggs, then cover with the top half of the biscuit. Press down gently.
- In a small bowl, mix melted butter with garlic powder and paprika.
- Brush the tops of all sliders generously with the butter mixture.
- Bake for 15-20 minutes until biscuits are golden brown and cheese is bubbling.
- Let cool in the pan for 5 minutes to set the structure.
- Cover tightly with plastic wrap and refrigerate overnight (or up to 24 hours) before serving.
Notes
Do not overcook the eggs; they should be slightly wet before baking as they will continue to cook in the oven. Chilling the sliders overnight is crucial for them to hold their shape and prevent messiness. They can be served cold, room temperature, or microwaved for 30-45 seconds. For variations, try adding jalapeños and pepper jack cheese, or substitute bacon with breakfast sausage.
