- 4 salmon fillets (about 6 oz each, center-cut)
- 2 tablespoons avocado oil or olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Kosher salt and black pepper (to taste)
- 4 tablespoons unsalted butter
- 3 tablespoons fresh lemon juice
- 2 cloves fresh garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1/4 teaspoon red pepper flakes (optional)
- Zest of 1–2 lemons
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
- Pat salmon fillets completely dry with paper towels to ensure crispy skin. Remove any pin bones.
- Brush both sides of the salmon lightly with avocado oil. Sprinkle with garlic powder, onion powder, smoked paprika, salt, and pepper. Press seasoning into the fish.
- Place salmon fillets skin-side down on the baking sheet, ensuring they are not touching.
- Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork but remains slightly translucent in the center.
- While salmon bakes, melt butter in a small saucepan over medium-low heat.
- Add minced garlic and red pepper flakes to the melted butter. Cook for 30 seconds until fragrant, being careful not to burn the garlic.
- Remove saucepan from heat. Stir in fresh lemon juice, lemon zest, and red pepper flakes. Whisk until smooth.
- Remove salmon from oven and let rest for 2 minutes.
- Spoon the warm lemon butter sauce over the fillets and sprinkle with fresh parsley. Serve immediately.
Notes
Ensure salmon is completely dry before seasoning for maximum crispiness. Do not overcrowd the pan; cook in batches if necessary. Fresh garlic should be added to the sauce off-heat to prevent burning. Salmon can be reheated in the oven at 350°F to restore crispiness.
