  • 2 cups (450g) cottage cheese (small-curd or large-curd)
  • 4 large eggs
  • 1 cup (100g) shredded cheese (mix of sharp cheddar and mozzarella)
  • 1 cup (30g) fresh spinach, chopped
  • 1/2 cup (75g) chopped vegetables (bell peppers, onions, mushrooms, or zucchini)
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • Non-stick spray (avocado oil spray recommended)

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Blend the cottage cheese in a blender or food processor for 60-90 seconds until completely smooth and silky.
  3. Pour the smooth cottage cheese into a large mixing bowl and whisk in the 4 eggs until fully combined and uniform.
  4. Add garlic powder, oregano, salt, and pepper to the wet mixture and whisk again.
  5. Fold in the shredded cheese and chopped vegetables. Note: If using onions or mushrooms, sauté them first to remove moisture and let cool. Squeeze excess water from spinach.
  6. Generously spray 12 silicone muffin cups with non-stick spray.
  7. Divide the mixture evenly among the cups, filling them about 3/4 full.
  8. Bake for 20-25 minutes until the tops are set, slightly golden, and a toothpick inserted into the center comes out clean.
  9. Let the bites cool in the pan for 5 minutes, then transfer to a wire rack to firm up before removing.
  10. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.

Notes

Ensure cottage cheese is blended until completely smooth to avoid lumps. Sauté onions and mushrooms before adding to prevent excess moisture. Fill molds only 3/4 full to allow for rising. Reheat with a damp paper towel to maintain moisture.
