  • 1/2 cup (50g) sharp cheddar cheese, shredded
  • 3 stalks green onions, chopped
  • 2 tbsp (30ml) ranch dressing
  • Chicken broth (splash, optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Place chicken breasts in a baking dish with a splash of chicken broth, salt, and pepper.
  2. Bake chicken for 20-25 minutes until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then shred into bite-sized chunks.
  3. Wash and thoroughly dry celery stalks. Cut into 4-inch lengths and scoop out the center seeds with a small spoon to create boats.
  4. Place celery boats in the fridge to chill and crisp up.
  5. In a large mixing bowl, combine shredded chicken, Greek yogurt, buffalo sauce, shredded cheddar, green onions, and ranch dressing. Mix until coated.
  6. Taste and adjust seasoning if needed.
  7. Divide the chicken mixture evenly among four meal prep containers (approx. 1 cup per container).
  8. Arrange the chilled celery boats on top of or alongside the chicken mixture in each container.
  9. Seal containers tightly and refrigerate for up to 4 days.

Notes
