A quick, single-serving Greek chicken bowl designed to eliminate food waste and ensure fresh, juicy results every time. Ready in under 30 minutes with minimal cleanup.

- 1 large boneless, skinless chicken thigh (approx. 6 oz / 170g)
- 1 tbsp extra virgin olive oil (divided)
- 2 cloves garlic, minced
- 1 tbsp fresh lemon juice (plus zest)
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup dry quinoa (or couscous)
- 1 cup water or low-sodium chicken broth
- 2 tbsp full-fat plain Greek yogurt
- 1/2 medium cucumber, diced
- 1.5 oz feta cheese, crumbled
- 6–8 Kalamata olives, halved
Instructions
- In a small bowl, whisk together 1 tbsp olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper.
- Place the chicken thigh in a shallow dish or bag. Pour half the marinade over the chicken, rub to coat, and save the remaining half for the sauce.
- Rinse the quinoa and add it to a small saucepan with water or broth. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
- In a small bowl, combine the reserved marinade, Greek yogurt, 1 tbsp diced cucumber, and a pinch of salt to make the tzatziki sauce.
- Heat a skillet over medium-high heat. Add the chicken thigh and cook undisturbed for 6-7 minutes until golden brown. Flip, reduce heat to medium-low, and cook for another 5-6 minutes until internal temperature reaches 165°F.
- Remove chicken from pan and let rest for 3 minutes.
- Assemble the bowl by spreading warm quinoa in a bowl. Top with the chicken, remaining cucumber and olives, tzatziki sauce, and crumbled feta. Squeeze extra lemon juice over the top if desired.
Notes
Chicken thighs are recommended over breasts for juiciness. Let the chicken rest before cutting to retain juices. Room temperature yogurt mixes better into the sauce. If using couscous, simply pour boiling water over it and let sit for 5 minutes. Do not freeze this dish as cucumbers and feta do not freeze well.
