A quick, healthy, and flavorful weeknight dinner featuring salmon fillets roasted with a sweet and savory honey garlic glaze, served alongside crispy roasted asparagus.

- 1.5 pounds salmon fillets (wild-caught sockeye or atlantic, approx. 1-inch thick)
- 1 tablespoon neutral oil (avocado or light olive oil)
- 6 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup honey
- 3 tablespoons gluten-free tamari
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon red pepper flakes (optional)
- 1 pound asparagus spears
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
- Rinse salmon fillets and pat completely dry with paper towels. Arrange on the prepared baking sheet and season lightly with salt and pepper.
- In a small bowl, whisk together honey, tamari, minced garlic, grated ginger, apple cider vinegar, and red pepper flakes until smooth.
- Brush about half of the glaze over the top of each salmon fillet.
- Roast salmon for 12-15 minutes, or until it flakes easily with a fork and is opaque throughout.
- While salmon roasts, trim woody ends from asparagus. Toss with olive oil, salt, and pepper on a separate baking sheet.
- Roast asparagus for 10-12 minutes until tender-crisp and slightly charred.
- Remove salmon from oven and brush with remaining glaze. Let rest for 2 minutes before serving with asparagus.
Notes
Pat salmon dry before glazing to ensure the sauce sticks. Use thick fillets (1-inch) to prevent overcooking. Do not use regular soy sauce if gluten-free is required; use tamari or coconut aminos. Salmon continues to cook after removal from the oven, so remove when slightly translucent in the center for moist results.
