  • 3/4 cup (95g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup (125g) creamy peanut butter
  • 1/2 cup (85g) mini chocolate chips (optional)
  • Flaky sea salt, for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a 24-cup mini muffin tin with paper liners.
  2. Melt the butter in a microwave-safe bowl in 15-second intervals, stirring until liquid. Let cool slightly.
  3. In a mixing bowl, whisk melted butter and sugar vigorously for about a minute until glossy. Add eggs and vanilla, whisking until smooth.
  4. Sift in flour, cocoa powder, and salt. Fold in with a spatula until just combined and no dry flour remains. Do not overmix.
  5. Divide batter evenly among muffin cups, filling each about 3/4 full.
  6. Drop a small dollop of creamy peanut butter into the center of each brownie, pushing it in slightly so it is mostly submerged.
  7. Bake for 12-14 minutes until edges are set but centers look slightly soft and shiny.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Sprinkle with flaky sea salt before serving.

Notes

Do not overmix the batter to ensure fudgy texture. Use room temperature eggs to prevent seizing. Cool completely before eating as they are soft when hot.
