- ½ cup (120g) full-fat sour cream
- ½ cup (120g) mayonnaise
- 10 ounces (280g) frozen spinach, thawed and squeezed completely dry
- 1 can (14 ounces) artichoke hearts, drained and chopped roughly
- 4 cloves garlic, minced
- 1½ cups (170g) sharp cheddar cheese, shredded from a block
- ½ cup (50g) grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Prep ingredients: Thaw spinach and squeeze out all excess water using a clean kitchen towel. Chop artichoke hearts, mince garlic, and shred cheese.
- Melt the base: Heat a large skillet over medium-low heat. Add cream cheese, sour cream, and mayonnaise. Stir gently until the mixture is smooth and creamy, about 5-7 minutes.
- Add veggies and garlic: Stir in the drained spinach, chopped artichokes, minced garlic, Italian seasoning, and red pepper flakes. Cook for 2-3 minutes until garlic is fragrant and spinach wilts further. If liquid pools, simmer to evaporate.
- Melt the cheese: Reduce heat to low. Gradually add shredded cheddar and Parmesan cheese, stirring constantly until melted and the mixture is thick and gooey, about 3-4 minutes. If too thick, add a splash of milk; if too thin, continue stirring.
- Taste and adjust: Remove from heat. Taste and adjust seasoning with salt and pepper as needed.
- Serve: Serve immediately hot from the skillet or transfer to a serving bowl. Top with extra Parmesan or parsley if desired.
Notes
Ensure the spinach is squeezed completely dry to prevent a watery dip. Use full-fat dairy products for the best texture. Shred your own cheese to avoid anti-caking agents that prevent smooth melting. Keep heat low when melting cheese to prevent separation. This dip does not freeze well due to the dairy content.
