Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on two sides, and grease lightly.
  2. Melt the butter completely (microwave or saucepan) and let it cool slightly so it is warm, not piping hot.
  3. In a large mixing bowl, combine the eggs and granulated sugar. Beat vigorously with a whisk for 3-4 minutes until the mixture is pale, thick, and ribbon-like.
  4. While whisking, slowly pour in the melted butter. Add the sifted cocoa powder and salt, whisking until the mixture is smooth and glossy.
