Instructions
- Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on two sides, and grease lightly.
- Melt the butter completely (microwave or saucepan) and let it cool slightly so it is warm, not piping hot.
- In a large mixing bowl, combine the eggs and granulated sugar. Beat vigorously with a whisk for 3-4 minutes until the mixture is pale, thick, and ribbon-like.
- While whisking, slowly pour in the melted butter. Add the sifted cocoa powder and salt, whisking until the mixture is smooth and glossy.
- Add the all-purpose flour and fold in gently with a silicone spatula until just combined. Do not overmix.
- Stir in the semi-sweet chocolate chips.
- Pour batter into the prepared pan and spread evenly.
- Bake for 25-28 minutes until the top is set and shiny with cracks. A toothpick inserted into the center should come out with moist crumbs, not wet batter.
- Cool completely in the pan on a wire rack for at least 1 hour before lifting out and slicing.
Notes
Use cold eggs to help stabilize the emulsion for a fudgy texture. Do not substitute brown sugar for granulated sugar if you want the crackly top. Ensure you beat the eggs and sugar vigorously for 3-4 minutes to create the shiny crust. Do not overmix the flour to avoid cakey brownies. Cool completely before cutting to prevent crumbling.
