Description
These fudgy, colorful brownies are a perfect no-frosting dessert that stays moist for days. Packed with rainbow sprinkles and chocolate chips, they are easy to make and kid-approved.
Ingredients
Scale
- 1 cup (226g) unsalted butter
- 1 cup (170g) dark chocolate chips (60% cocoa preferred)
- 1 ½ cups (300g) granulated sugar
- ½ cup (100g) light brown sugar
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 cup (125g) all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- ½ teaspoon salt
- 1 cup (100g) rainbow sprinkles (jimmies)
- ½ cup (85g) extra chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the long sides, and grease lightly.
- In a medium saucepan over low heat (or microwave in 30-second intervals), melt the butter and dark chocolate chips together until smooth. Set aside to cool slightly.
- In a large mixing bowl, whisk granulated sugar, brown sugar, eggs, and vanilla extract vigorously for 1-2 minutes until glossy. Whisk in the melted chocolate-butter mixture.
- Gently fold in the flour, cocoa powder, and salt until just combined. Fold in the 1 cup of rainbow sprinkles.
- Pour batter into the prepared pan and spread evenly. Sprinkle the extra ½ cup of chocolate chips on top.
- Bake for 25-30 minutes until edges are set but the center is still slightly jiggly.
- Cool in the pan for at least 30 minutes before lifting out with the parchment sling and slicing into squares.
Notes
Do not overbake; brownies continue to cook on the hot pan after removal. For cleaner cuts, chill brownies in the fridge for an hour before slicing. If using cheap sprinkles, toss them in a teaspoon of flour before folding in to prevent color bleeding.
