Description

  • 1 cup (226g) unsalted butter
  • 1 cup (170g) dark chocolate chips (60% cocoa preferred)
  • 1 ½ cups (300g) granulated sugar
  • ½ cup (100g) light brown sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 cup (100g) rainbow sprinkles (jimmies)
  • ½ cup (85g) extra chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the long sides, and grease lightly.
  2. In a medium saucepan over low heat (or microwave in 30-second intervals), melt the butter and dark chocolate chips together until smooth. Set aside to cool slightly.
  3. In a large mixing bowl, whisk granulated sugar, brown sugar, eggs, and vanilla extract vigorously for 1-2 minutes until glossy. Whisk in the melted chocolate-butter mixture.
  4. Gently fold in the flour, cocoa powder, and salt until just combined. Fold in the 1 cup of rainbow sprinkles.
  5. Pour batter into the prepared pan and spread evenly. Sprinkle the extra ½ cup of chocolate chips on top.
  6. Bake for 25-30 minutes until edges are set but the center is still slightly jiggly.
  7. Cool in the pan for at least 30 minutes before lifting out with the parchment sling and slicing into squares.

Notes

Do not overbake; brownies continue to cook on the hot pan after removal. For cleaner cuts, chill brownies in the fridge for an hour before slicing. If using cheap sprinkles, toss them in a teaspoon of flour before folding in to prevent color bleeding.
