  • 2 cups (60g) fresh spinach, washed and dried
  • 1 clove garlic, minced
  • 1/4 cup (30g) crumbled feta cheese
  • 1 teaspoon olive oil or cooking spray
  • 1/2 teaspoon red pepper flakes
  • Black pepper to taste

Instructions

  1. Prep the vegetables: Wash and thoroughly dry the spinach. Mince the garlic and crumble the feta cheese. Have all ingredients ready near the stove.
  2. Whip the egg whites: Pour cold egg whites into a clean, dry bowl. Whip with a whisk or fork until soft peaks form (glossy, voluminous, peaks curl over when lifted). Do not over-whip.
  3. Sauté aromatics: Heat an 8-inch non-stick skillet over medium-low heat. Add olive oil or spray. Add spinach and garlic, sautéing for 1-2 minutes until spinach just begins to wilt.
  4. Pour and fold: Gently pour whipped egg whites over the spinach. Use a spatula to gently fold the whites over the veggies, preserving air bubbles. Cook on medium-low for about 2 minutes until edges set but top is slightly jiggly.
  5. Add cheese and finish: Sprinkle feta cheese over one half of the omelet. Fold the other half over the cheese. Cook for another 1-2 minutes until cheese is slightly melted and bottom is golden brown.
  6. Serve: Slide onto a plate. Top with black pepper and red pepper flakes. Serve immediately while hot and fluffy.

Notes

Ensure egg whites are cold for better whipping volume. Use a completely clean and dry bowl to prevent the whites from failing to whip. Cook on medium-low heat to avoid rubbery texture. Fresh spinach is preferred over frozen to prevent sogginess. This recipe is naturally gluten-free.
