Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or cooking spray and dust with flour, tapping out excess.
- In a large mixing bowl, combine pumpkin puree, vegetable oil, granulated sugar, eggs, and vanilla extract. Stir until mostly smooth.
- In a separate medium bowl, whisk together flour, baking soda, salt, and pumpkin pie spice until no streaks of flour remain.
- Pour dry ingredients into wet ingredients. Stir until just combined; do not overmix. Fold in optional mix-ins like chocolate chips or walnuts.
- Pour batter into the prepared loaf pan and smooth the top. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Ensure you use 100% pure pumpkin puree, not pumpkin pie filling. If the batter is too runny, squeeze excess moisture from the pumpkin puree. For a cleaner process, let kids crack eggs into a separate bowl first. Cover the top with foil if it browns too quickly.
