Description

  • 1 box (15.25 oz) Chocolate Cake Mix
  • 1 box (15.25 oz) Vanilla Cake Mix
  • 1 box (15.25 oz) Strawberry Cake Mix
  • 6 large eggs, room temperature
  • 1/2 cup vegetable oil
  • 1 1/4 cups water (per box)
  • 2 cups fresh strawberries, hulled and chopped
  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp strawberry jam

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans, lining bottoms with parchment paper.
  2. Divide cake mixes into three bowls. Prepare each batter according to package directions using eggs, oil, and water. Mix on medium speed for 2 minutes until smooth.
  3. Pour each batter into a separate prepared pan (filling about 1/2 full).
  4. Bake for 25-30 minutes, rotating pans halfway through, until a toothpick inserted in the center comes out clean.
  5. Cool cakes in pans for 10 minutes, then turn out onto a cooling rack to cool completely.
  6. Chill a mixing bowl and beaters in the freezer for 10 minutes.
  7. Whip heavy cream, powdered sugar, vanilla extract, and strawberry jam on high speed until stiff peaks form.
  8. Mash fresh strawberries with a fork and gently fold them into the whipped cream.
  9. Assemble the cake by stacking layers with frosting in between. Frost the top and sides.
  10. Refrigerate for at least 30 minutes to set before slicing and serving.

Notes

Ensure eggs and oil are at room temperature for better emulsification. Keep the mixing bowl and beaters cold to ensure the cream whips properly. Do not overmix the batter to avoid a dense cake. The cake is best served chilled but can be eaten at room temperature.
