Description

A kid-friendly, no-oven-stress dessert featuring layers of yellow cake, fresh berries, and stabilized vanilla cream. Perfect for Labor Day celebrations and make-ahead entertaining.

  • 15.25 oz (435g) Yellow Cake Mix
  • 1 cup water (or milk for extra richness)
  • 1/3 cup vegetable oil
  • 3 large eggs, room temperature
  • 2 cups (480ml) Heavy Whipping Cream, cold
  • 2 tbsp (30ml) Vanilla Bean Paste or high-quality vanilla extract
  • 1/4 cup (50g) Granulated Sugar
  • 1 small box (3.4 oz / 96g) Vanilla Instant Pudding Mix
  • 1 pint (450g) Strawberries, washed, hulled, and sliced
  • 2 cups (300g) Blueberries, rinsed and patted dry
  • 1 pint (225g) Raspberries
  • 1 bunch Mint Leaves, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. Mix cake batter according to box instructions using water, oil, and eggs. Pour into prepared pan.
  3. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
  4. Once cooled, cut the cake into 1-inch cubes.
  5. Wash and dry berries. Slice strawberries; leave blueberries and raspberries whole.
  6. In a large, cold bowl, combine heavy cream, sugar, vanilla bean paste, and instant pudding mix.
  7. Whip on medium-high speed until soft peaks form. Do not over-whip.
  8. To assemble, add a thin layer of cake cubes to the bottom of a large glass trifle bowl.
  9. Add a layer of berries, followed by dollops of vanilla cream. Spread gently.
  10. Repeat layers (Cake, Berries, Cream) three or four times, ending with cream on top.
  11. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight.
  12. Garnish with fresh mint leaves and extra berries before serving.

Notes

Ensure berries are completely dry to prevent soggy layers. Keep cream and bowl cold for best whipping results. The trifle tastes better after chilling overnight as the cake absorbs moisture. Do not freeze, as the cream and berries may separate or become watery.
