These easy football tailgate bacon cheeseburger sliders are a foolproof, crowd-pleasing recipe featuring juicy ground beef, thick-cut bacon, and cheddar cheese on sweet Hawaiian rolls, all topped with a tangy secret sauce.

  • 1 lb (450g) 80/20 ground beef
  • 1 package (12 rolls) Hawaiian sweet rolls
  • 12 slices cheddar cheese
  • 12 slices thick-cut bacon
  • 1/2 cup (120ml) mayonnaise
  • 1/4 cup (60ml) BBQ sauce
  • 1 tbsp (15ml) yellow mustard
  • 1 tsp (5g) garlic powder
  • 1/2 tsp (2.5g) smoked paprika

Instructions

  1. Preheat oven to 350°F (175°C). Place a baking sheet on the rack below the middle rack to catch drips.
  2. Open the package of Hawaiian rolls and slice the entire block in half horizontally. Place the bottom half, cut-side up, into a 9×13 inch baking dish.
  3. Heat a large skillet over medium-high heat. Add ground beef and break it into small crumbles. Cook until browned and no longer pink, then drain excess grease if necessary.
  4. In the same skillet, cook bacon strips until crispy but not burnt. Cut into halves or thirds and drain on paper towels.
  5. Layer the crumbled beef, a slice of cheddar cheese, and bacon pieces onto the bottom half of the rolls in the baking dish.
  6. Place the top half of the rolls back on, cut-side down, and press down gently to compact.
  7. In a small bowl, whisk together mayonnaise, BBQ sauce, yellow mustard, garlic powder, and smoked paprika until smooth.
  8. Brush the secret sauce generously over the top of the rolls, ensuring it gets into the crevices.
  9. Bake for 10-12 minutes until cheese is melted and tops are golden brown. Cover with foil if browning too quickly.
  10. Remove from oven and let cool for 5 minutes to allow cheese to set. Slice between rolls and serve warm.

Notes

Do not overcook the beef in the skillet as it will continue to cook in the oven. Press the buns down gently to help sauce penetrate the bread. For best texture, reheat leftovers in a 350°F oven for 5-7 minutes. Do not freeze after baking as buns become crumbly.
