  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup (120g) pure pumpkin puree
  • 1 3/4 cups (220g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/3 cup granulated sugar (for coating)
  • 1 tbsp ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a shallow bowl, mix 1/3 cup granulated sugar with 1 tbsp cinnamon for the coating.
  4. In a large bowl, beat butter, 1 cup granulated sugar, and 1/2 cup brown sugar until light and fluffy (2-3 minutes).
  5. Add egg and vanilla extract; beat until combined.
  6. Add pumpkin puree and mix just until incorporated.
  7. Add dry ingredients to wet ingredients in two additions, mixing until just combined.
  8. Scoop dough into 1.5 tablespoon balls.
  9. Roll each ball in the cinnamon-sugar coating until fully covered.
  10. Place cookies on baking sheets, spacing 2 inches apart.
  11. Bake for 10-12 minutes until edges are set and lightly golden but centers look soft.
  12. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure pumpkin puree is not pie filling. Do not overbake as cookies continue to cook on the hot pan. For softer cookies, store in an airtight container with a slice of bread. Dough can be frozen and baked straight from frozen, adding 1-2 minutes to bake time.
