Ingredients

  • 1.5 lbs red potatoes (medium-sized, roughly same size)
  • 3 tbsp extra virgin olive oil (divided)
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp dried oregano
  • Kosher salt (for boiling and seasoning)
  • Freshly cracked black pepper (to taste)

Instructions

  1. Scrub potatoes clean (do not peel). Place in a large pot and cover with cold water by an inch. Add a generous pinch of kosher salt.
  2. Bring to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes until fork-tender. Drain carefully.
  3. Let potatoes sit in a colander or on a clean kitchen towel for a few minutes to steam off excess water and dry thoroughly.
  4. Preheat oven to 425°F (220°C). Line a heavy rimmed baking sheet with parchment paper or foil and drizzle with 1 tablespoon of olive oil.
  5. Transfer hot potatoes to the prepared baking sheet. Dip the bottom of a mason jar or flat glass in olive oil and gently press each potato to about 1/2 inch thickness.
  6. Drizzle remaining 2 tablespoons of olive oil over the smashed potatoes. Sprinkle with salt and pepper.
  7. Bake for 20-25 minutes, rotating the pan halfway through, until edges are golden brown and crispy.
  8. While potatoes bake, melt butter in a small saucepan over low heat. Add minced garlic and dried herbs. Simmer for 30 seconds until fragrant.
  9. As soon as potatoes come out of the oven, brush or drizzle the garlic herb butter over them. Serve immediately.

Notes

Do not skip the drying step after draining; moisture is the enemy of crispiness. Use waxy potatoes like reds or Yukon Golds, not russets, to prevent them from falling apart. For best results, ensure potatoes are dry before smashing. Reheat in oven or air fryer to restore crunch; do not microwave.
