Ingredients

  • 2 pounds small Yukon Gold potatoes
  • Water for boiling
  • Salt for boiling water and seasoning
  • 1/2 cup (1 stick) unsalted butter
  • 45 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons olive oil
  • Black pepper to taste

Instructions

  1. Fill a large pot with water, add a generous pinch of salt, and bring to a boil. Add potatoes and cook for 15-20 minutes until tender. Drain and let cool slightly.
  2. Preheat oven to 425°F (220°C). Line a 13×9-inch baking sheet with parchment paper or foil.
  3. Place boiled potatoes on the baking sheet and gently smash them flat using a potato masher or the bottom of a glass.
  4. In a small saucepan, melt butter over low heat. Add minced garlic, rosemary, thyme, parsley, salt, and pepper. Simmer for 1-2 minutes to infuse flavors, then remove from heat.
  5. Brush smashed potatoes with olive oil, then drizzle with half of the garlic herb butter.
  6. Bake for 20-25 minutes until edges are golden and crispy.
  7. Switch oven to broil and cook for an additional 2-3 minutes, watching closely to prevent burning.
  8. Remove from oven and drizzle with remaining garlic herb butter. Serve hot.

Notes

If you don’t have a pastry brush, you can use a spoon to drizzle the butter. You can boil and smash potatoes ahead of time and store in the fridge until ready to bake. For a vegan option, use vegan butter or olive oil. Ensure potatoes are not overcrowded on the baking sheet for maximum crispiness.
