Ingredients

  • 20 ounces frozen shredded hash browns
  • 810 slices thick-cut bacon
  • 1 tablespoon vegetable or olive oil
  • 1 medium yellow onion, diced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped chives or green onions
  • Salsa (optional, for serving)

Instructions

  1. Cook the bacon in a separate pan or microwave until crispy. Drain on paper towels, crumble into chunks, and set aside.
  2. Place a 12-inch cast-iron skillet over medium-high heat for 2 minutes. Add vegetable oil and swirl to coat.
  3. Add frozen hash browns to the skillet, pressing down firmly to create an even layer. Do not stir for the first 5 minutes to allow crisping.
  4. After 5 minutes, break the potatoes into smaller chunks or flip the mass. Add diced onion and garlic powder, stirring to combine.
  5. Cook for another 3-4 minutes until onions are soft and potatoes are crispy. Add smoked paprika, black pepper, and salt.
  6. Make four small wells in the hash brown mixture and crack an egg into each well.
  7. Reduce heat to medium-low, cover the skillet with a lid, and cook for 3-4 minutes until egg whites are set.
  8. Remove from heat, sprinkle with crumbled bacon and shredded cheese. Cover for 1 minute to melt cheese.
  9. Garnish with chopped chives or green onions and serve immediately.

Notes

Do not stir the hash browns in the first 5 minutes to ensure they get crispy. Use high heat for potatoes and lower heat for eggs. Shred your own cheese for better melting. If using fresh potatoes, squeeze out all moisture before cooking.
