  • 45 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ cup freshly grated Parmesan cheese
  • 1 large lemon (zest and juice)
  • Flaky sea salt
  • 2 tablespoons fresh parsley, chopped
  • Black pepper, freshly cracked

Instructions

  1. Wash potatoes and cut into 1-inch cubes. Place in a bowl of cold water and soak for at least 30 minutes to remove excess starch.
  2. Drain potatoes and pat them completely dry with paper towels or clean kitchen towels. Ensure they are bone-dry.
  3. Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or lightly grease it.
  4. In a large mixing bowl, combine dried potatoes, oil, minced garlic, dried thyme, dried rosemary, salt, and pepper. Toss until every piece is evenly coated.
  5. Spread potatoes in a single layer on the baking sheet, ensuring they are not touching to prevent steaming.
  6. Roast for 20 minutes. Remove pan and flip the potatoes.
  7. Sprinkle grated Parmesan cheese evenly over the potatoes. Return to oven and roast for another 10-15 minutes until tender inside and crispy outside with golden-brown cheese spots.
  8. Remove from oven. Immediately zest the lemon over the hot potatoes and sprinkle with fresh parsley and flaky sea salt. Toss gently and serve immediately.

Notes

Soaking and drying the potatoes are crucial for crispiness. Do not crowd the pan; use two sheets if necessary. Garlic can burn at high temps, so mixing it with oil helps protect it, or add it in the last 10 minutes. For vegan version, substitute Parmesan with nutritional yeast.
