Instructions

  1. Preheat oven to 350°F (175°C). Grease a donut pan generously with non-stick spray or butter.
  2. Pour 4 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce to a simmer.
  3. Simmer the cider for 20-25 minutes until it reduces to approximately 1 cup of syrupy liquid. Let it cool completely.
  4. In a medium bowl, whisk together the cooled reduced cider, melted butter, eggs, and vanilla until emulsified.
  5. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  6. Gradually add the dry ingredients to the wet ingredients. Stir gently with a spatula until just combined; do not overmix.
  7. Fill each donut hole in the pan about ¾ full using a spoon or ice cream scoop.
  8. Bake for 10-12 minutes, or until the donuts spring back when touched and a toothpick comes out clean.
  9. Let donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool for another 5 minutes until warm.
