  • 3 tablespoons (45ml) maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup (30g) walnuts, chopped
  • 1 tablespoon pumpkin seeds (pepitas), optional

Instructions

  1. Toast the chopped walnuts in a small skillet over medium heat for 3-5 minutes until fragrant and lightly browned. Transfer to a plate to cool.
  2. In a medium bowl, whisk together the milk, maple syrup, vanilla extract, cinnamon, ginger, nutmeg, and salt until the mixture is uniform.
  3. Stir in the chia seeds and pumpkin puree. Whisk or stir vigorously for 30 seconds to break up any clumps of chia seeds.
  4. Let the mixture sit for 10 minutes, then stir again to prevent clumping and ensure a smooth texture.
  5. Divide the mixture into mason jars or small bowls. Cover and refrigerate for at least 4 hours, or preferably overnight.
  6. Before serving, give the pudding a good stir. Top with toasted walnuts, pumpkin seeds, and an extra drizzle of maple syrup if desired.

Notes

The second stir after 10 minutes is crucial to prevent chia seeds from clumping at the bottom. Do not use pumpkin pie filling; use 100% pure pumpkin puree. This pudding does not freeze well as the texture becomes grainy. Store in the refrigerator for up to 5 days.
