- 4 cups vanilla ice cream (premium, full-fat)
- 1 cup pumpkin puree (100% pure, not pie filling)
- 1/2 cup heavy cream
- 3–4 tablespoons real maple syrup
- 1 teaspoon pumpkin pie spice
- 1 cup ice (optional, for extra thickness)
- Pinch of sea salt (optional)
Instructions
- If the ice cream is rock hard, let it sit on the counter for 5-10 minutes to soften slightly for easier blending.
- Scoop 4 cups of vanilla ice cream into a blender.
- Add 1 cup of pumpkin puree and 1 teaspoon of pumpkin pie spice to the blender. Add a pinch of salt if using.
- Drizzle in 3 tablespoons of maple syrup and pour in 1/2 cup of heavy cream.
- Add ice cubes if desired and if your blender is not high-powered.
- Blend on low speed initially to prevent splashing, then gradually increase to medium-high. Blend for 30-45 seconds until smooth.
- Stop the blender and scrape down the sides with a spatula to ensure even blending.
- Taste the shake and adjust sweetness or spice levels as needed.
- Pour immediately into chilled glasses.
- Top with whipped cream, a drizzle of maple syrup, and a sprinkle of cinnamon if desired. Serve immediately.
Notes
Do not use pumpkin pie filling; use plain 100% pure pumpkin puree. For best texture, serve immediately as the shake may separate if left to sit. Chill glasses in the freezer for 15 minutes before serving for a colder drink. If the shake is too thick, add more milk or cream; if too thin, add more ice cream or ice.
