- 12 sheets uncooked lasagna noodles (broken into 2-inch pieces)
- 1 pound Italian sausage (mild or spicy)
- 1 medium yellow onion (diced)
- 6 cloves garlic (minced)
- 24 oz jar marinara sauce
- 4 cups chicken broth (low-sodium)
- 1 cup heavy cream
- 2 cups shredded mozzarella cheese
- 2 teaspoons Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 cups fresh spinach (optional)
- 1/2 cup freshly grated Parmesan cheese (for serving)
Instructions
- Heat a large pot or Dutch oven over medium-high heat. Add Italian sausage, breaking it up with a spoon, and brown for 5-7 minutes. Drain excess fat if necessary.
- Reduce heat to medium. Add diced onion and cook for 2-3 minutes until softened. Add minced garlic and red pepper flakes, cooking for 1 minute until fragrant.
- Pour in marinara sauce and chicken broth. Stir to combine with the meat and onions. Add Italian seasoning, salt, and pepper. Bring to a gentle boil.
- Add broken lasagna noodles to the boiling soup. Stir immediately to prevent sticking. Simmer uncovered for 10-12 minutes until noodles are al dente. Stir occasionally.
- Reduce heat to low. Pour in heavy cream and stir gently until incorporated. Simmer for 2-3 minutes to heat through without boiling vigorously.
- Remove the pot from the heat. Sprinkle shredded mozzarella over the top. Cover and let sit for 2-3 minutes to melt using residual heat. Stir until creamy.
- Ladle into bowls and top with extra mozzarella, Parmesan, and fresh basil if desired. Serve immediately with crusty bread.
Notes
Break noodles into small pieces for even cooking. Remove from heat before adding cheese to prevent graininess. Soup thickens as it cools; add splash of milk or cream when reheating. Does not freeze well due to dairy.
