A rich, homemade iced pumpkin spice latte featuring a complex pumpkin syrup made with real puree and spices, served over cold brew or espresso with heavy cream for a café-quality experience.

- 1 cup (240g) canned 100% pure pumpkin puree
- 1 cup (240ml) water
- 1 cup (200g) granulated sugar
- ½ cup (100g) light brown sugar
- 2 tablespoons pumpkin pie spice
- ½ teaspoon salt
- 1 teaspoon pure vanilla extract
- 2 cups (480ml) cold brew coffee or chilled espresso
- ½ cup (120ml) heavy cream
- Ice cubes
- Whipped cream (optional, for topping)
- Cinnamon (optional, for garnish)
Instructions
- In a medium saucepan, combine water, granulated sugar, brown sugar, pumpkin puree, pumpkin pie spice, and salt.
- Whisk ingredients over medium heat until sugar dissolves and mixture comes to a gentle simmer (about 5-7 minutes).
- Reduce heat to low and simmer for another 5-7 minutes, stirring occasionally, until syrup thickens slightly and coats the back of a spoon.
- Remove from heat and stir in vanilla extract.
- Let the syrup cool completely (refrigerate for 20 minutes to speed up process).
- Prepare coffee by brewing cold brew or espresso and chilling it completely.
- Fill a large glass with ice cubes.
- Pour in cold coffee, leaving room for cream and syrup.
- Add 2-3 tablespoons of cooled homemade pumpkin syrup and stir gently.
- Pour heavy cream over the top; stir for uniform color or let float for layers.
- Top with whipped cream and a sprinkle of cinnamon if desired.
- Serve immediately.
Notes
Ensure the syrup is completely cool before adding to ice to prevent dilution. The syrup can be made up to 2 weeks in advance and stored in an airtight jar in the fridge. Use 100% pure pumpkin puree, not pumpkin pie filling. For a lighter version, substitute heavy cream with whole milk or oat milk.
