A single-serving, one-pan dinner featuring seared chicken breast in a rich, creamy garlic and parmesan sauce. This recipe is designed for speed, minimal cleanup, and zero leftovers.

- 6 oz (170g) boneless, skinless chicken breast
- 1 tbsp unsalted butter
- 3 cloves garlic, minced
- 2 tbsp dry white wine (or chicken broth)
- 1/4 cup (60ml) heavy cream or half-and-half
- 1/4 cup (25g) freshly grated Parmesan cheese
- 1 tsp dried Italian seasoning
- 1/4 tsp red pepper flakes
- Salt and black pepper to taste
Instructions
- Pat the chicken breast dry and season with salt and pepper. Pound it to an even 1/2-inch thickness.
- Heat an 8-inch skillet over medium-high heat. Add butter and let it foam.
- Sear the chicken for 2-3 minutes per side until golden brown and cooked through (165°F). Remove chicken to a plate, leaving pan juices.
- Reduce heat to medium. Add garlic and red pepper flakes to the pan, cooking for 30-60 seconds until fragrant.
- Add Italian seasoning and stir for 10 seconds.
- Pour in white wine to deglaze the pan, scraping up browned bits. Simmer for 1 minute.
- Add heavy cream and bring to a gentle simmer.
- Stir in Parmesan cheese until melted and sauce is smooth.
- Return chicken to the pan, spooning sauce over the top. Warm through for 1 minute.
- Taste and adjust seasoning. Serve immediately.
Notes
Use freshly grated Parmesan to prevent a grainy sauce. If the sauce breaks, remove from heat and whisk in a teaspoon of cold water or cream. Do not freeze this dish as the dairy will separate. If substituting wine, use chicken broth and add a splash of lemon juice for acidity.
