Description
A creamy, spicy, and comforting buffalo chicken dip that comes together in just five steps. Perfect for game day parties, this crowd-pleasing appetizer uses rotisserie chicken and slow cooker convenience for maximum flavor with minimal effort.
Ingredients
- 8 ounces (225g) full-fat block-style cream cheese, softened
- 1 cup (240g) full-fat sour cream
- 2 cups (200g) shredded sharp cheddar cheese
- ½ cup (120ml) Frank’s RedHot Original buffalo wing sauce
- 3 cloves garlic, minced
- ½ cup (120ml) blue cheese dressing
- 3 cups (400g) cooked chicken, shredded (rotisserie recommended)
- 2–3 green onions, sliced
Instructions
- Soften the cream cheese by letting it sit on the counter for 15-20 minutes or microwaving for 15-20 seconds until soft but not melted.
- In a large mixing bowl, beat the softened cream cheese, sour cream, buffalo wing sauce, and blue cheese dressing together with a fork or hand mixer until smooth and lump-free.
- Stir in the shredded cheddar cheese and shredded chicken gently with a wooden spoon or spatula, folding until combined. Taste and adjust seasoning if desired.
- Transfer the mixture to a slow cooker and cook on low for 20-30 minutes, stirring once halfway through, until hot and bubbly. Alternatively, bake in a dish at 350°F (175°C) for 20-25 minutes.
- Stir in the sliced green onions and serve immediately with tortilla chips, celery sticks, or bread. Keep warm in the slow cooker on the ‘warm’ setting if serving over time.
Notes
Ensure cream cheese is fully softened to avoid lumps. Shred your own cheese to prevent anti-caking agents from making the dip grainy. This dip does not freeze well due to the dairy content; store in the refrigerator for up to 4 days. If the dip is too thick, add a splash of milk or extra buffalo sauce.
