A safe, messy, and delicious creamy buffalo chicken dip that kids can help make. It requires no sharp knives, uses simple ingredients, and comes together in just 20 minutes for a perfect game day or family snack.

- 8 oz block cream cheese (softened to room temperature)
- 1 cup plain Greek yogurt (full-fat recommended)
- 2 cups mozzarella cheese (freshly shredded from a block)
- 2 cups shredded cooked chicken (rotisserie or leftover)
- 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
- 1/2 cup ranch dressing
- 2 stalks green onions (sliced, for garnish)
- 2 tbsp butter (optional, for sautéing chicken)
Instructions
- Preheat oven to 350°F (175°C).
- If using rotisserie chicken, remove skin and bones and shred with two forks. If using leftover chicken, chop into bite-sized pieces. Set aside.
- Cut the block of cream cheese into four large cubes and place in a large mixing bowl. Let sit for 10-15 minutes to soften, or microwave in 15-second bursts until soft but not melted.
- Add the softened cream cheese, Greek yogurt, and ranch dressing to the bowl. Beat with an electric mixer on low or stir vigorously with a wooden spoon until smooth and lump-free.
- Stir in the shredded chicken and half of the buffalo sauce. Mix gently to coat the chicken without breaking it down. Taste and add remaining buffalo sauce if more heat is desired.
- Pour the mixture into a 9×9 inch square baking dish or small oval casserole dish and spread evenly.
- Sprinkle the shredded mozzarella cheese on top.
- Bake for 15-20 minutes until the cheese is bubbly, golden brown, and the edges are hot.
- Garnish with sliced green onions and serve warm with celery, carrots, bell peppers, or sturdy crackers.
Notes
Do not use tub spreadable cream cheese as it is too watery. Always shred mozzarella from a block to ensure it melts smoothly. For kids, start with half the buffalo sauce and adjust to taste. This dip does not freeze well; store leftovers in the refrigerator for up to 4 days.
