  • 2 tbsp (30g) 100% pure pumpkin puree
  • 1 shot espresso or 1/2 cup strong brewed coffee
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 12 tbsp pure maple syrup
  • 1/2 tsp vanilla extract

Instructions

  1. Combine milk, pumpkin puree, cinnamon, ginger, nutmeg, and cloves in a small saucepan.
  2. Whisk over medium-low heat until warm (150-160°F), ensuring not to boil the milk. Whisk constantly to prevent sticking.
  3. Remove from heat and stir in maple syrup and vanilla extract. Taste and adjust sweetness or spice as desired.
  4. Froth the milk mixture using a handheld frother, French press, or vigorous whisking until creamy with foam.
  5. Brew espresso or strong coffee and pour into a mug.
  6. Slowly pour the frothed pumpkin milk over the coffee, holding back foam with a spoon, then spoon foam on top.
  7. Garnish with a dash of cinnamon or nutmeg if desired.

Notes

Do not boil the milk as it can scorch and alter the taste. Whisk pumpkin puree thoroughly with cold milk first to prevent clumping. Use fresh spices for best aroma. The spiced milk mixture can be stored in the fridge for up to 2 days, but froth fresh for best texture. Do not freeze as pumpkin texture changes upon thawing.
