Description
These chewy oatmeal apple cookies with cinnamon raisins combine the texture of a warm apple crisp with the comfort of a cinnamon roll. Made with pantry staples, they are soft, moist, and perfect for breakfast, snacks, or dessert.
Ingredients
- 3 cups (270g) Old-Fashioned Rolled Oats
- 1 ½ cups (190g) All-Purpose Flour
- ½ cup (115g) Unsalted Butter, softened
- 1 cup (200g) Brown Sugar, packed
- ½ cup (100g) Granulated Sugar
- 1 Large Egg, room temperature
- 2 teaspoons Vanilla Extract
- 2 teaspoons Ground Cinnamon
- ½ cup (60g) Raisins
- 1 medium Fresh Apple (about 1 cup grated), peeled
- 1 teaspoon Baking Soda
- ½ teaspoon Salt
- Optional: ½ cup chopped Walnuts or Pecans
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until just combined and smooth.
- Add the dry ingredients to the wet ingredients and mix on low speed until just combined.
- Stir in the grated apple and raisins (and nuts, if using) with a spatula until the dough is thick and sticky.
- Chill the dough for 30 minutes to an hour (optional but recommended to prevent spreading).
- Scoop dough balls (about 2 tablespoons each) onto the prepared baking sheets, leaving 2 inches between them.
- Bake for 12-14 minutes, or until edges are golden brown but centers still look slightly soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Do not use quick oats as they turn to mush; use old-fashioned rolled oats for chewiness. Ensure butter is softened, not melted, to maintain texture. Grate the apple on large holes for best texture. Do not overbake; cookies continue to cook on the hot pan. Store in an airtight container with a slice of bread to keep them soft for up to 5 days.
