  • 1 loaf white bread (about 400g, day-old or toasted)
  • 2 tablespoons unsalted butter
  • 10 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon kosher salt (adjust to taste)
  • 1/2 teaspoon freshly cracked black pepper
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 4 stalks green onions, sliced

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter.
  2. Heat a large skillet over medium-high heat. Cook the sausage, breaking it into crumbles, until browned and crispy. Drain excess grease if necessary, then set aside to cool slightly.
  3. Tear the bread into 1-inch chunks and place them in the prepared baking dish in an even layer. If using fresh bread, toast it first to dry it out.
  4. Spread the cooked sausage evenly over the bread. Sprinkle half of the shredded cheese over the sausage.
  5. In a large bowl, whisk together the eggs, milk, heavy cream, Dijon mustard, salt, and pepper until fully combined.
  6. Pour the egg mixture evenly over the bread and sausage. Use a spatula to gently press down on the bread to ensure it absorbs the liquid. Let it sit for 5 minutes.
  7. Top with the remaining cheese.
  8. For make-ahead: Cover tightly and refrigerate overnight. For immediate baking: Let sit at room temperature for 20-30 minutes.
  9. Bake for 45-50 minutes until the top is golden brown and the center is set. If browning too quickly, cover loosely with foil for the last 15 minutes.
  10. Let the casserole rest for 10 minutes before slicing. Sprinkle with sliced green onions and serve warm.

Notes

Use day-old or stale bread to prevent the casserole from becoming mushy. Press the bread down into the egg mixture to ensure even soaking. Let the casserole rest for 10 minutes after baking to allow the custard to set properly. Can be frozen unbaked or baked and sliced for later reheating.
