Ingredients

  • 2 medium ripe peaches (approx. 350g)
  • 1 ball burrata cheese (approx. 7 oz / 200g)
  • 2 cups arugula (approx. 60g)
  • 2 tbsp balsamic vinegar
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp flaky sea salt
  • 1/4 tsp black pepper
  • 45 fresh basil leaves (optional)

Instructions

  1. Wash peaches, cut in half, and remove pits. Pat cut sides dry with a paper towel to ensure proper caramelization.
  2. In a small bowl, whisk together balsamic vinegar, olive oil, black pepper, and a pinch of salt until emulsified.
  3. Heat a grill pan or outdoor grill to medium-high heat. Place peach halves cut-side down on the grill.
  4. Grill peaches for 2 minutes without moving them to develop char marks, then flip and grill for 1-2 minutes more until warmed through but still holding shape.
  5. Toss arugula with half of the dressing and spread on a plate.
  6. Place grilled peach halves on top of the greens.
  7. Tear open the burrata ball and place it on top of the peaches, scooping out the creamy center to drizzle over the salad.
  8. Drizzle with remaining dressing and sprinkle with flaky salt.
  9. Serve immediately while peaches are warm and cheese is creamy.

Notes

Use peaches that yield slightly to pressure; avoid mushy or rock-hard fruit. If fresh burrata is too expensive, substitute with fresh mozzarella and a dollop of heavy cream. This salad does not store well; assemble and eat immediately for best texture. For a vegan option, substitute burrata with avocado.
